Is there a server I could use so that it would show that my IP was originating from California.

Yes I saw both of those servers but when I tracked my IP it showed it was not originating from California but from Kansas.

Inaccurate databases. Most services anyway correctly report the exit-IP of our California servers as located in California. Remember that IP geo-location databases are difficult to maintain and inaccuracy is normal.
