If my internet is 500Mbps up and down, will any server be okay to get my full speeds? Or is there any speciific server I need to be on?

Well you can achive those speeds (minus overhead) in general on every server according to the serverload and usernumbers on each one. In particular you should choose Wireguard for best results on performance if possible.
