How can I get Bluetit to change servers, I'm trying to troubleshoot a slow connection and want to switch to a new server to see if that fixes it.

Restarting the bluetit service (Ubuntu 22.04) just causes it to reconnect to the same server. 

I’ve also tried goldcrest —disconnect and —reconnect - same problem.

Hello!

You can configure Bluetit to connect to a white list of servers, or to the "best" server in a country, or to a "best" server in a continent. The manual exhaustively explains everything:

Clearly, if the "best" server in a given country or continent or white list is the same between the first and the second connection, Bluetit will connect again to the same server. A forced randomization is not built-in Bluetit at the moment.
