The inconvenience with the phone number you can avoid with a burner phone or landline,voip etc. With Signal you can do group chat now also. Signal is not only voice its also video. There are more safe options like threema although you have to pay 2-dollars ones.I think thats not really problem. In a lot of countries getting a burner phone line is legally impossible. Matrix also has adio and video, and is receiving a lot of development. Plus it is decentralized (federated) unlike Signal which can spy on your metadata (I know they have mitigated this with some encryption scheme, but still somehow vulnerable).
